Writing poetry can be a tricky business. The great thing about acrostic poems is that they don't need to rhyme, and they're also easy to write.
Acrostic poems use all the letters in the word to start each line of the poem. You can write whatever you like, just remember that the first letter of each line needs to be capitalised.
It's also a good idea to think carefully about phrases that work with your chosen word and its letters. For example, 'Seeing friends for the first time in weeks' could work for the 'S' in 'school' for your back-to-school poem.
